GOOD - FOR - YOU FRUITY CAKE &
ORANGE SYRUP
 
2/3 c. whole wheat flour
2/3 c. unbleached flour
1/2 c. quick rolled oats
1 1/2 tsp. baking soda
1 tsp. ground cinnamon
4 egg whites
1/3 c. honey
1/4 c. canola oil
1 tsp. vanilla
1/3 c. orange juice
3/4 c. apples or pears, shredded
1/2 c. cranberries
1/4 c. raisins
1/4 c. dates, chopped

CAKE: Combine both flours, oats, baking soda and cinnamon. In another bowl, whisk together egg whites and honey. Whisk in oil and vanilla then orange juice. Stir in apples or pears, cranberries, raisins and dates. Pour fruit mixture over the dry ingredients. Fold until dry ingredients are just moistened. Coat a 9 x 13 inch pan, spread batter evenly. Bake at 350 degrees 20 to 25 minutes until brown and firm to the touch. Cool on wire rack.

ORANGE SYRUP:

1/2 c. orange juice
1/3 c. honey
1/2 tsp. cinnamon

Over medium heat, cook together the orange juice, honey and cinnamon until syrupy. Pour over hot cake. Serve warm or cold.
