SZECHWAN PORK WITH MIXED VEGETABLES | |
1-2 tbsp. cornstarch 1/4 c. water 1/4 c. peanut oil 1 tsp. ground ginger or 3 tsp. grated fresh ginger 1 clove garlic, minced 1 tsp. black pepper 8 oz. boneless pork loin chops, cut into 2-inch strips 3 med. carrots, sliced 1 med. red bell pepper, cut into sm. strips 1 med. sweet onion, cut into strips 4 dried Chinese peppers, crushed 8 oz. fresh mushrooms, sliced 1 sm. bunch broccoli, stalks removed and florets cut into bite-sized pieces 3-4 tbsp. soy sauce Steamed rice Mix cornstarch with water and set aside. Pour peanut oil into bottom of wok or large saute pan, and heat until very hot. Add ginger, garlic, and black pepper. Add pork and toss rapidly until it becomes light in color. Add carrots and continue tossing ingredients to avoid charring and to coat each piece evenly. |
