CHOCOLATE PEANUT BUTTER CUP
COOKIES
 
8 oz. semi-sweet chocolate
1 stick unsalted butter
1 1/2 c. all purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
3/4 c. sugar
1/2 tsp. vanilla
8 peanut butter cups (like Reeses)

Preheat oven to 350 degrees. Melt chocolate with butter in microwave. Set aside to cool. Stir flour, baking powder, and salt together. Beat eggs, sugar, and vanilla with electric mixer until light and fluffy. Slowly add cooled chocolate mixture and mix well. Add dry ingredients. Mix only until just combined. Cut peanut butter cups into chunks and gently fold into batter. Drop by spoonfuls onto ungreased cookie sheet. Bake until set, 10-12 minutes. Cool on baking sheet for 1 minute before transferring them to a wire rack to cool completely. Yields about 3 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
