EASY AND LIGHT CHICKEN CASSEROLE 
1 lb. chicken breast, boned, skinned and chopped in bite size pieces
1 green pepper, chopped (optional)
Corn tortillas, cut in quarters
Grated Monterey Jack Cheese
2 to 3 cloves garlic, chopped or pressed
1 med. onion, chopped
1 c. cherry tomatoes, sliced, stem side down
Chopped jalapenos and cilantro, if desired, may be added

Saute chicken, onion, and garlic in a little oil until chicken is almost done. Place tortillas in bottom of glass casserole dish, over lapping slightly. Next, layer the chicken mixture. Place sliced cherry tomatoes on top of chicken; then grated cheese on top. Bake in 350 degree oven until cheese is slightly brown. Serves 2 to 4.
