ROSH HASHANAH 
1 c. cold black coffee
3 eggs
1 c. sugar
3 tbsp. oil
1 lb. (2 c.) honey
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. lemon juice
3 tbsp. orange marmalade

Beat with mixer oil, sugar, and eggs. Mix coffee and honey together. Sift dry ingredients together and add alternately with coffee and honey to the oil and sugar mixture. Add marmalade and lemon juice. Spray 3 regular sized foil pans with nonstick spray.

Bake about 45 minutes at 350 degrees. The cake may also be baked in a tube pan (sprayed with nonstick spray) at 350 degrees for 1 1/4 to 1 1/2 hours. Makes a firm moist cake.
