NEW ZEALAND KIWI CHEESECAKE 
1 1/2 c. graham cracker crumbs
1/4 c. granulated sugar
2 tbsp. milk
1 tsp. vanilla extract
1 c. granulated sugar
3 tbsp. confectioners' sugar
2 kiwi fruit
6 tbsp. butter, melted
1 1/2 lbs. cream cheese
1/4 tsp. salt
4 lg. eggs, lightly beaten
1 c. sour cream
1/2 tsp. vanilla extract

Mix cracker crumbs, 1/4 cup granulated sugar and melted butter Press this mixture on the bottom and partly up the sides of a greased 9-inch baking dish or pie pan. Chill for 5 to 10 minutes or bake for 10 minutes in 350 degree oven. Cool before filling.

In a large mixing bowl, beat the cream cheese, milk, salt and vanilla until thoroughly blended. Add the eggs and 1 cup of sugar and beat until light and creamy. Pour into prepared pie shell and bake at 350 degrees for 35 minutes or until lightly brown and the cake is set in the center. Remove from the oven and cool for 10 minutes.

Prepare the topping of sour cream, confectioners' sugar and 1/2 teaspoon vanilla. Spread this on top of the cake and return to oven, baking for another 15 minutes. Cool and refrigerate. Garnish with peeled and sliced kiwi fruit.
