CHEESY GREEN TOMATO MUFFINS | |
2 c. flour 1 tbsp. baking powder 1/2 tsp. salt 2 tbsp. honey 1 c. milk 2 c. chopped green tomatoes 1 c. grated Cheddar cheese 1 egg 1/4 c. melted butter or vegetable oil 450 degree oven. Sift flour, baking powder and salt together. Make a well in the center of the bowl. Beat the egg and combine it with remaining ingredients. Pour the wet ingredients in with the dry ingredients all at once. Stir just enough to moisten batter, about 15 strokes. The batter should look lumpy. Grease 12 muffin cups or line with paper cup liners. Fill each cup 2/3 full of batter. Bake for 25 minutes or until well browned. Yield: 12. Time: 45 minutes. |
