SWISS STEAK 
1 (2 lb.) round steak
Flour
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. oil
1/2 c. chopped celery
1/2 c. diced onion
1/4 c. diced green pepper
1/3 c. tomato juice

Pound steak. Combine 1 cup flour, salt and pepper; dredge steak in flour mixture. Brown in hot oil. Place steak in 2 quart casserole dish. Saute celery, onion and green pepper in hot oil. Add 3 tablespoons flour, tomato juice and 2 cups water; mix well. Pour over steak. Bake at 375 degrees for 1 hour and 30 minutes.
