ITALIAN ZUCCHINI CASSEROLE 
1 1/2 lb. zucchini
1 1/2 c. seasoned bread crumbs
3/4 c. Parmesan cheese
1/4 c. minced onion
2 tbsp. parsley
1 1/4 tsp. salt
1/8 tsp. pepper
2 eggs, beaten
2 tbsp. butter

Cut zucchini in cubes, boil 5 minutes; drain well. Mix all ingredients except a little cheese and the butter. Place in 1 1/2 quart casserole, sprinkle with cheese and butter. Bake 30 minutes in 350 degree oven.
