GRANDMA ROSE'S MEATBALLS | |
3 lbs. ground beef or (1 beef, 1 pork, and 1 veal) 1 1/2 c. bread crumbs 1/2 c. Parmesan cheese, grated 6 eggs 6 cloves, finely chopped garlic 2 1/2 tsp. basil leaves 3/4 tsp. finely chopped parsley 1 1/2 tsp. salt (to taste) 1 tsp. black pepper 1 tbsp. oil to be added last to prevent sticking In large bowl, combine ground meat, bread crumbs, cheese, garlic, salt, pepper, basil, parsley, and eggs. Mix and blend thoroughly. Add oil and mix again. Roll meatballs. To keep them from sticking to your hands, keep hands moist with water. In frying pan, heat 1/2 cup oil. When oil is very hot, brown meatballs quickly. Make sure they are brown enough, but be careful not to burn them. Set them aside until sauce is ready. |
