OATMEAL BANANA NUT BREAD 
1/2 c. shortening
1 c. sugar
2 whole eggs
1 c. mashed bananas
1 1/2 c. sifted flour
1 tsp. baking soda
1/4 c. quick oats
3/4 c. chopped pecans
1/4 tsp. salt
1 tsp. butter or vanilla flavoring

Cream shortening and sugar well. Add eggs, one at a time, mixing thoroughly after each addition. Add bananas and mix well. Sift flour, soda and salt. Add with oats to creamed mixture. Stir in nuts and flavoring. Pour batter into greased 9x5 inch loaf pan and bake at 350 degrees for 50-55 minutes or until an inserted toothpick comes out clean.
