PUFFY CHEDDAR OMELET | |
4 eggs, separated 1/2 c. mayonnaise 3 tbsp. water 2 tbsp. butter 1 c. shredded Cheddar cheese Beat egg whites until soft peaks form. In small bowl, beat together egg yolks, mayonnaise and water. Fold egg yolk mix into whites. Melt butter in skillet. Add egg mixture. Cook over low heat 10 minutes or until brown on bottom but still moist on top. Bake at 350 degrees for 5 minutes. Sprinkle on cheese and bake 1 to 2 minutes or until cheese melts. Serves 3 to 4. |
