PUFFY CHEDDAR OMELET 
4 eggs, separated
1/2 c. mayonnaise
3 tbsp. water
2 tbsp. butter
1 c. shredded Cheddar cheese

Beat egg whites until soft peaks form. In small bowl, beat together egg yolks, mayonnaise and water. Fold egg yolk mix into whites. Melt butter in skillet. Add egg mixture. Cook over low heat 10 minutes or until brown on bottom but still moist on top. Bake at 350 degrees for 5 minutes. Sprinkle on cheese and bake 1 to 2 minutes or until cheese melts. Serves 3 to 4.

I've made this omelet since high school back in '75! One if my family's all time favs. I like to cook up a little chopped onion in the melting butter first and then add the eggs. Always remember salt & pepper or any seasonings you like. Add this to the yolk mixture. You can also add anything else you like on omelets while cooking too. We do ham & cheese on weekends! This is a must have recipe.
