GINGERBREAD PUFFINS 
1 beaten egg
1/2 c. sugar
1/4 c. light molasses
1/4 c. salad oil
1 c. flour
1/8 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 c. boiling water

Combine egg, sugar and molasses. Beat well. Add salad oil. Add sifted dry ingredients, then water. Mix thoroughly. Fill greased muffin pans 2/3 full. Bake in moderate oven (350 degrees) 25 to 30 minutes. Makes 1 dozen puffins.
