BEST EVER CORNISH GAME HEN | |
4 game hens salt and pepper Chinese Five Spice 3/4 cup butter, melted 3/4 chicken broth cooking sherry (optional) Salt, pepper, and generously sprinkle outside of bird with Chinese Five Spice. Mix melted butter, chicken broth and maybe put a little bit of cooking sherry in if you have it on hand – use this mixture as a baste. Heat roaster or Crock Pot to 400 to 450°F; put hen on rack in roaster or slow cooker for one hour, basting every 15 minutes with butter and broth mixture. Baste gently. Chinese 5 spice will harden somewhat and form a sort of outer skin, so you want to baste gently, so as not to knock off Chinese 5 spice. This spice adds a wonderful flavor to game hen! Hen will be golden brown when done. Remove to plate when done, and serve with favorite side dishes. We like it with a salad and sourdough bread! Makes 4 Servings (1 game hen per serving).
