ITALIAN COOKIES 
6 lg. eggs
1 1/2 c. sugar
2 sticks butter, melted and cooled
1 tsp. vanilla
1 tsp. lemon extract
1/2 c. milk
1 orange rind, grated
6 c. flour
3 tbsp. baking powder
1/2 tsp. salt

Beat eggs, gradually adding sugar until light and fluffy, on high speed for about 5 minutes. Add butter. Add vanilla, lemon extract, milk, and orange rind. Add 4 cups of the flour, baking powder, and salt. Remove from mixer and fold in 2 cups flour. Cover and let rest 1 hour. Place dough, a little at a time, into a cookie press. Shape into "S" or "I" shapes, and place on ungreased cookie sheet.

Bake in a preheated 400°F oven for 10 minutes or even less, being careful not to burn them.

Variations: Use pure almond flavoring or strega (Galliano) in place of the lemon. Amaretto liqueur makes another wonderful addition. Adjust flavorings to taste. Cookies may be dunked halfway in melted chocolate.

No mention of when to add the sugar? I have made these using Almond extract instead of Vanilla extract. More Italian Flavor more like "Stella Doro "S" cookies....
