6 lg. eggs 1 1/2 c. sugar 2 sticks butter, melted and cooled 1 tsp. vanilla 1 tsp. lemon extract 1/2 c. milk 1 orange rind, grated 6 c. flour 3 tbsp. baking powder 1/2 tsp. salt Beat eggs, gradually adding sugar until light and fluffy, on high speed for about 5 minutes. Add butter. Add vanilla, lemon extract, milk, and orange rind. Add 4 cups of the flour, baking powder, and salt. Remove from mixer and fold in 2 cups flour. Cover and let rest 1 hour. Place dough, a little at a time, into a cookie press. Shape into "S" or "I" shapes, and place on ungreased cookie sheet. Bake in a preheated 400°F oven for 10 minutes or even less, being careful not to burn them. Variations: Use pure almond flavoring or strega (Galliano) in place of the lemon. Amaretto liqueur makes another wonderful addition. Adjust flavorings to taste. Cookies may be dunked halfway in melted chocolate. |
