ITALIAN PASTRY COOKIES 
1 c. Crisco
1/2 c. sugar
2 eggs, separated
4 tbsp. evaporated milk
2 1/2 tsp. orange extract
2 1/2 tsp. lemon extract
1 tsp. vanilla
Rind of 1 orange and 1 lemon
2 1/2 c. flour

Cream shortening and sugar. In another bowl combine egg yolks, rind sand flavorings. Add to sugar and shortening and beat well. Add flour, mix well. Refrigerate for at least 1 hour.

Shape into balls, use a greased cookie sheet. Press down with index finger and brush with slightly beaten egg white. Garnish as desired, chopped nuts, whole almonds, cherries, etc. Bake at 350 degrees until brown, about 15 minutes.
