SAUSAGE AND CHEESE CASSEROLE 
1/2 lb. hot, bulk pork sausage
1/2 c. chopped onion
2 cans (4 oz. each) OLD EL PASO chopped green chilies, divided usage
6 eggs, slightly beaten
1/3 c. PET evaporated milk
1/4 tsp. salt
1 box (7 1/2 oz.) OLD EL PASO NACHIPS tortilla chips
2 c. (8 oz.) shredded mild Cheddar cheese
1/2 c. chopped tomato

Cook sausage and onion in medium skillet; drain, reserving 1 tbsp. fat. Stir in 1 can of the green chilies. Remove from skillet and set aside.

Preheat oven to 350 degrees. In reserved fat, cook combined eggs, milk and salt; stirring occasionally until set.

In an 11x7 inch baking dish, layer tortilla chips, sausage mixture, half of cheese, additional layer of tortilla chips, egg mixture, remaining cheese and tomato. Cook 30-35 minutes. Makes 6 to 8 servings.
