VEGETABLE MEDLEY 
2 c. fresh green beans
2 c. cauliflower, cut in bite size pieces
1 c. kidney beans, drained
1/2 green pepper, diced
12 black olives, sliced (about 1/2 c.)

Steam green beans and cauliflower until tender crisp. Combine with kidney beans, green pepper and olives in serving bowl. Toss with 6 tablespoons dressing. Chill before serving. Serves 6, about 150 calories each.

HERB VINAIGRETTE:

1/4 c. oil
2 tbsp. vinegar
3/4 tsp. tarragon leaves
1/4 tsp. crushed red pepper
1/8 tsp. black pepper
1/8 tsp. salt

Stir all ingredients together.
