KATIE'S CARROT CAKE 
2 c. sifted flour
1 1/2 c. oil
1 tsp. salt
2 c. sugar
3 c. grated carrots
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
4 eggs, unbeaten
1 tsp. vanilla

Sift flour, baking soda, powder, salt and cinnamon. Combine sugar and eggs; beat well. Add grated carrots and oil. Add dry ingredients. Blend in vanilla. Pour into greased and floured pan(s). Makes 3 layers or 1 large loaf. Bake for 1 hour at 350 degrees. Ice when cooled with cream cheese icing.
