YUMMY SHRIMPS FROM SPAIN 
1 onion, chopped
1/2 green pepper, chopped
6 tbsp. olive oil
3 tomatoes, ripe
2 cloves garlic
1 lemon
1 c. white (dry) wine
12 lg. shrimp, fresh
Salt to taste
Nutmeg to taste
Saffron to color (can substitute food coloring)

Saute chopped onion and green pepper in oil. Peel, remove seeds and chop the tomatoes. Saute for 10 minutes.

Peel and crush garlic. Add to the tomatoes. Extract juice from lemon and add. Add wine and cook 10 minutes. Add peeled shrimps and cook until they are red, about 3 or 4 minutes. Add salt, nutmeg and saffron. Serve with hot white rice. Yields 4 servings.
