ZUCCHINI CHEESE CASSEROLE 
1 1/2 lbs. zucchini
1 sm. onion, chopped
2 tbsp. butter, or butter
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. grated Jack cheese (9 oz.)
1 egg
1 c. cottage cheese
2 tbsp. minced parsley
1/2 c. Parmesan
1 (4 oz.) can diced green chilies (optional)

Dice zucchini. Combine with onions and butter in skillet. Saute until tender. Mix in flour, salt, pepper (chilies if used). Turn into 9 inch pie plate or 2 1/2 quart baking dish. Sprinkle with Jack cheese. Mix egg with cottage cheese and parsley. Spoon over top of zucchini mixture. Sprinkle with Parmesan. Bake uncovered at 400 degrees for 20 minutes. 4 to 5 servings.
