SCALLOP CHOWDER | |
If my budget doesn't balance I substitute 1/2 pound sea scallops and 1 pound white fish for the 1 pound of sea scallop. I always double this recipe too because it goes too fast. It never makes it off the stove. 3 slices bacon, diced 2 onions, chopped 1/2 stick butter 4 lg. potatoes, diced 4 chowder crackers 1 tsp. salt 1 lb. sea scallops 1 c. heavy cream 6 c. bottled clam juice White pepper to taste Cook bacon with 2 tablespoons of the butter. Add the onions and saute for about 3 minutes. Add juice of clams and add the potato. Cook 15 minutes. Stir in salt and pepper; simmer 10 minutes longer. Add scallops, cream and crackers. Simmer for a few minutes, just enough to heat up scallops. Enjoy. Serves 4-6. |
