VEGGIE CHILI | |
1/2 lb. ground chuck or ground turkey 1 extra lg. onion, diced 1 green pepper, diced 1 c. celery, chopped 1 c. carrot, chopped 1 (28 oz.) can whole tomatoes 1 (10 oz.) can corn, drained 1 (16 oz.) can kidney beans, drained 1 lg. can V-8 juice 1 pkg. Chili O Mix 2 beef bouillon cubes 1 clove garlic 1/4 tsp. black pepper Cooked spaghetti, if desired Brown ground meat with onion and garlic. Drain. Add green pepper, celery, carrots and whole tomatoes. Simmer until vegetables are crunchy-tender. Add all remaining ingredients except spaghetti. Simmer 10 minutes. Do not over cook. Veggies should still be crunchy. Add al dente spaghetti. I use elbow macaroni, bows or wheels (any thing bite-size). Meat can be left out of this recipe and replace with 2 tablespoons oil for sauteing vegetables. |
