WELSH CURRENT CAKE | |
3 c. flour 1 1/2 tbsp. baking powder 3/4 tsp. baking soda 3/4 c. butter (1 1/2 sticks) 1 3/4 c. black currents 1 c. sugar 2 eggs, mixed with 1/4 c. milk Milk to thin batter Brown sugar Preheat oven to 400 degrees. Cut butter into flour until it resembles coarse crumbs. Add dry ingredients. Mix. Mix eggs with 1/4 cup milk. Add to dry ingredients. Add milk to thin the batter (1/2 to 3/4 cups). Place in loaf tin lined with greased waxed paper. Sprinkle top with brown sugar. Place in top of oven for 15 minutes at 400 degrees. Reduce heat to 325 degrees and cook for 1 3/4 hours. |
