SQUASH CAKE 
1 pkg. yellow cake mix
1 pkg. (4 serving) instant vanilla pudding
4 eggs
1/4 c. oil
3 c. grated zucchini
1/4 tsp. salt
1 1/2 tsp. cinnamon
1 c. chopped nuts

Combine all in bowl. Blend, then beat at medium for 4 minutes. Pour into greased and floured 10 inch fluted or tube pan. Bake at 350 degrees for 50 to 55 minutes. Cake will begin to pull away from sides. Cool in pan 15 minutes. Remove or sprinkle with powdered sugar if desired.
