SQUASH SOUFFLE 
1 (16 oz.) pkg. squash, defrosted
3 tbsp. melted butter
3 eggs
Dash of cinnamon and nutmeg
1/2 c. flour
1 1/2 c. milk
1/2 c. sugar
Capful of vanilla

Beat all ingredients together except nutmeg. Pour in buttered souffle dish. Sprinkle with nutmeg. Bake at 350 degrees for 1 hour. Serves 4-5.
