STIR-FRY CHICKEN WITH VEGETABLES 
2/3 lb. chicken breast
1/4 tsp. salt
1/2 c. cooking oil
6 dried Chinese mushrooms, softened
1 c. water or chicken broth
2 tbsp. water
1 tbsp. cornstarch
6 green onions, cut into 1/2-inch pieces
1/2 c. broccoli spears
1 tbsp. sesame seed oil

Remove the skin from the chicken and cut diagonally into thin slices. Mix with water, cornstarch and salt; let stand for 20 minutes. Wash vegetables, slice and put aside.

Heat wok or frying pan. Put oil in wok. When the oil is medium hot, put chicken into the pan. Stir-fry until the color changes. Remove chicken and drain the oil. Put aside.

Add sesame seed oil with vegetables and add water or chicken broth and boil. Add rest of the ingredients and boil again. Then add chicken and serve.
