TOMATO MIX FOR CANNING 
Combine in large pot:

1 qt. celery, chopped
6 green peppers, diced
1 qt. water

Simmer for 15-20 minutes. Add:

3 tbsp. sugar
2 tbsp. salt

Bring to boil. Pack into pint jars. Wipe rim. Put on lids. Process in boiling water bath 45 minutes, pressure canner, 25 minutes.

Use for spaghetti sauce, in casseroles, chili and in vegetable soups.
