SCALLOPED EGGPLANT 
1 med. size eggplant
1 beaten egg
1/2 c. milk or 1 pt. tomatoes
2 tbsp. melted butter
1 sm. onion, chopped
1 c. dry bread crumbs
1/2 c. buttered bread or cracker crumbs
Cheese, grated on top

Peel; cut in 1 inch cubes. Cook in boiling water 8 minutes; drain. Add egg, butter, onions and bread crumbs. Place in greased baking dish. Top with buttered crumbs and grated cheese. Bake 30 minutes at 350 degrees.
