CHEESY CHICKEN CASSEROLE 
5 or 6 chicken breasts
1/2 c. chopped onion
1/2 c. chopped celery
3/4 c. mayonnaise
3/4 c. chicken broth (from cooking chicken)
3/4 lb. Velveeta cheese
1 can of green peas with pearl onions*

Boil chicken breasts with onion and celery until done. Cut into bite size chunks. In a double boiler over low heat, stir together mayonnaise, chicken broth and cheese. Stir constantly until cheese is melted. In a casserole, layer chicken, peas and pearl onions then sauce. Repeat until all are used.

Bake in a 350°F oven about 20 minutes.

*Sometimes green peas with pearl onions are hard to find. If this is the case, you may use a can of green peas and a small jar of pearl onions (not pickled).
