MAPLE CHEESECAKE 
CRUST:

1 pkg. yellow cake mix
2 tbsp. oil
1 egg

Preheat oven to 300°F. Reserve 1 cup cake mix. Combine remaining mix with oil and egg. Press into bottom and 3/4 way up the sides of a 9"x13" pan.

CHEESECAKE:

2 (8 oz.) pkgs. cream cheese
1/2 c. maple syrup
1 c. reserved cake mix
1 1/2 c. milk
1 tsp. lemon juice
3 eggs
1 tsp. vanilla

Blend cream cheese and syrup, add eggs and cake mix. Beat 1 minute at medium speed. On low speed, add milk, lemon juice and vanilla and beat until smooth. Pour into crust and bake at 300 degrees for 45 to 50 minutes until center is firm. Cool.

MAPLE FILLING:

1/3 c. cornstarch
3 egg yolks
1/2 c. water
1 1/2 c. maple syrup
1 c. water
1 tsp. vanilla
Nut meats

Combine cornstarch, 1/2 cup water and egg yolks. Stir well. Put syrup, 1 cup water and dash of salt (optional) in saucepan, add cornstarch mixture. Cook over low heat until it boils and is thick. Cool slightly. Pour over cooled cheesecake, sprinkle with chopped nuts. Chill before serving.
