GREEN BEANS ALMONDINE 
2 lb. fresh green beans
1 sm. ham-hock or 3 slices crisp bacon, broken
3 tbsp. butter
1/3 c. minced onion
1/2 c. sliced almonds
1 tsp. salt
1/4 tsp. pepper

In a large pan, cook beans, seasonings and ham-hock in a little water; bring to a boil, then reduce heat; cover and simmer until beans are fork tender; drain off most of liquid; chop meat in small pieces; saute' onions in butter until transparent; add to beans; add almonds; toss lightly and serve.
