CUCUMBER SALAD 
1 pkg. (3 oz.) lime gelatin
3/4 c. boiling water
1 c. mayonnaise
2 pkg. (3 oz.) cream cheese, room temperature
1 tsp. prepared horseradish
2 tbsp. lemon juice
3/4 c. grated unpeeled cucumber, squeezed & drained
1/4 c. finely chopped green onions

Dissolve gelatin in boiling water; cool slightly. Stir in mayonnaise, cream cheese, horseradish and lemon juice. Beat until smooth with a rotary beater or mixer. Chill until slightly thickened. Stir in cucumber and onion. Pour into mold and chill until set.
