SWISS STEAK 
2 lbs. round steak, 1" thick
Flour
Salt
Pepper
2 tbsp. shortening
1 onion, diced
1 c. diced celery
1 green pepper, diced
1 c. tomato soup
1/4 c. water

Cut meat into serving pieces. Season with salt and pepper and roll in flour. Heat pressure cooker; add shortening. Sear meat golden brown on both sides. Add onion, celery, pepper, tomato soup and water. Close cover securely. Place pressure regulator on vent pipe and cook 15 minutes with pressure regulator rocking slowly. Let pressure down on its own accord. Thicken gravy, if desired.
