NEW ENGLAND POT ROAST | |
1/4 c. plain flour 1 tbsp. plus 2 tsp. salt 1 1/4 tsp. pepper 4 lbs. roast 2 tbsp. Crisco 1 c. water 8 sm. potatoes, peeled and halved 8 med. carrots, halved crosswise and lengthwise 8 sm. onions 1/2 tsp. salt Stir together flour, 1 tablespoon plus 2 teaspoons salt and the pepper, rub mixture on meat thoroughly. Melt Crisco in large skillet, brown meat over medium heat, about 15 minutes. Reduce heat, add water; cover tightly and simmer on top of range or in 325 degree oven for 4 hours or until tender. About 1 hour before end of cooking time, add vegetables and 1/2 teaspoon salt. Place meat and vegetables on warm platter until ready to serve. Serves 6 to 8. |
