BANANA DATE MUFFINS 
1/2 c. sugar
1/2 c. butter
1 egg
1 tsp. vanilla
3 med. bananas, peeled and mashed
3/4 c. bran cereal
12 pitted dates, diced
2 c. plus 1 tbsp. all-purpose flour
2 tbsp. baking powder
2 to 3 tsp. cinnamon
1/2 tsp. salt

Preheat oven to 400 degrees. In mixing bowl, combine sugar, butter, egg and vanilla, using electric mixer until light and fluffy. Add bananas and stir to combine; add cereal and stir (I let this set for 5 minutes or more. You will get bigger muffins.) Add dates and stir; add flour, baking powder, ground cinnamon and salt.

Put 12 paper cupcake wrappers in muffin pan and fill each with an equal amount of batter. (I usually make 16 if I have let batter set for at least 5 minutes at the time I added the cereal.) Bake 20 to 25 minutes or until muffins are lightly brown and a toothpick inserted in center comes out clean. Remove muffins to wire rack to cool.
