ITALIAN CHICKEN OREGANATO 
1 lg. chicken, cut in sm. pieces
4 med. potatoes
1 tsp. salt
1/2 tsp. pepper
2 tsp. oregano
1 tsp. garlic powder
1 tsp. parsley
1/2 c. grated Parmesan cheese (optional)

Place pieces of chicken in pan, either sliced or quartered. Slice peeled potatoes and layer in pan with chicken. Season with above. Pour a quarter inch of olive oil into pan and mix thoroughly until the chicken and potatoes are coated with oil. Place into preheated 425 degree oven for approximately 1 hour. Turn chicken 2 or 3 times while baking. (4 servings)
