UPSIDE DOWN PINEAPPLE CAKE 
1 c. sliced pineapple
1 c. white sugar
1 c. flour
1 1/2 c. brown sugar
1/2 c. pineapple juice
3 eggs, separated
1/2 stick butter

In large skillet, melt butter and brown sugar. Arrange pineapple slices in bottom of skillet on top of brown sugar mixture. Inside of each pineapple slice, put a maraschino cherry. Drain the pineapple and mix the juice with the white sugar, and flour. Separate eggs, beat whites and yolks, then fold together. Add to flour/sugar mixture. Pour over pineapples in skillet. Bake at 375 degrees until browned. Turn upside down on plate while hot to serve.
