PINEAPPLE UPSIDE DOWN CAKE | |
1 yellow cake mix 1 sm. pkg. pineapple or vanilla instant pudding 4 eggs 1 c. water 1/4 c. oil TOPPING: 1 lg. can pineapple chunks, split, reserve juice 1 box regular pudding (coconut cream or vanilla) 1/4 c. brown sugar Heat oven to 350 degrees. Prepare cake ingredients by mixing at medium speed for 4 minutes. Set aside. Mix brown sugar and pudding with pineapple juice. Place pineapple chunks on bottom of a greased 9 x 13 pan. Pour pudding mixture on top. Pour cake batter on top. Bake for 45 to 55 minutes. Cool 5 minutes. Invert on tray. |
