CRISP OATMEAL WAFERS | |
3/4 c. sifted all-purpose flour 2 tsp. baking powder 1/4 tsp. salt 1 1/2 c. rolled oats 1/2 c. granulated sugar 1/2 c. melted shortening, cooled 1 egg, beaten 5 tsp. milk 1 1/2 tsp. vanilla flavor Heat oven to 400 degrees. Sift together first 3 ingredients. Combine oats and sugar, stir in shortening and egg. Add flour mixture alternately with combined milk and vanilla. Drop by rounded teaspoonful 2 inches apart on greased cookie sheet. Flatten to 1/8 inch thickness with spatula (wet with water). Bake in moderately hot oven at 400 degrees for 10 minutes. Remove from baking sheet at once. Cool on cake rack. Makes about 30 wafers. (1/2 cup chopped walnuts may also be added.) |
