MEXICAN LASAGNA | |
1 (16 oz.) bag tortilla chips 1 1/2 c. leftover chili, warmed 1 (16 oz.) can refried beans with jalapeno peppers, warmed 1 (8 oz.) container sour cream 1 (16 oz.) bar Mexican Velveeta cheese Guacamole dip (optional) In 9 x 13 inch baking dish, add 1/2 bag tortilla chips in a layer on the bottom. Spread over that warmed chili, refried beans and sour cream. Add last half of bag of chips. Bake in preheated 350 degree oven for 10-15 minutes. Melt Velveeta according to directions or in double boiler. Pour over top and serve immediately as is or with a few dollops of Guacamole as you desire. Serve with tossed salad. Serves 4-6. If you can't find refried beans with jalapeno peppers, substitute refried beans with sausage or plain refried beans with 2 tablespoons of your favorite salsa added to it. |
