CARROT CAKE | |
2 c. flour 2 c. sugar 1/4 tsp. salt 1 tsp. baking powder 4 eggs 1 1/2 c. vegetable oil 2 c. grated carrots (fresh and sweet) 1 tsp. baking soda Mix eggs, soda, oil. Add leaveners, spice, then flour, then carrots. Bake in 2 x 9 inch round pans at 375 degrees for 30-40 minutes. Watch oven temperature. ICING: 1 (8 oz.) pkg. cream cheese 1/2 c. butter 1 box XXX powdered sugar 1 tsp. vanilla 1 lemon, juiced 1 c. whole pecans Mix softened cheese with all ingredients, except pecans, until creamy. Frost cake after completely cooled and decorate with pecans. |
