CODFISH FRICASSEE (Portuguese) | |
2 lb. dried codfish 6 potatoes, white 3 eggs 1 onion 1/4 c. parsley 1/2 tsp. Tabasco sauce 3 garlic cloves 1 c. flour 1 c. water 1 tbsp. flour 3 egg yolks 3 1/2 tbsp. lemon juice 1. Soak codfish overnight. 2. Take skin and bones out. Cut codfish into 3 inches long and 2 inches wide fillets. 3. Beat eggs and dip codfish in eggs and then roll in flour and fry. 4. Cook white potatoes with skin and let cool off. Cut in round slices and do as in number 3. Sauteed onion, 1 cup water and 1 tablespoon flour dissolved like gravy. Add salt, also Tabasco sauce, lemon juice, beat egg yolks and mix all together. Then put in pyrex in layers. Bake at 375 degrees for 10 minutes. |
