ZUCCHINI BREAD 
3 eggs
2 cups sugar (white)
2 cups shredded zucchini
1 cup oil
2 tsp. vanilla
3 cups flour
1/2 cup nuts (optional)
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon

Heat oven to 325. Grease 2 loaf pans. In a large bowl, beat eggs until foamy. Stir in zucchini, sugar, oil and vanilla. Add remaining ingredients by hand.

Bake at 325°F for 50-60 minutes or until fork comes out clean.
