WESTERN CASSEROLE 
1 lb. ground beef
1 sm. onion, chopped
1/4 c. chopped green or yellow pepper
1 can red beans, drained or 1 can pork and beans, drained
1 c. raw rice
2 c. tomato juice
1 tsp. chili powder
1/2 tsp. cumin
1 tsp. salt
3/4 c. shredded low-fat cheddar cheese or any other kind of cheese
A few sliced black olives (optional)

Brown ground beef. Drain off fat then put it in a colander and rinse with hot water to remove excess fat. Return ground beef to skillet, add onion, green peppers, chili powder, cumin, and salt. Add small amount of water to saute the onions and green pepper until soft. Add beans, rice, and tomato juice, stir until mixed. Put all in a 2 quart baking dish. Bake, covered, at 350 degrees for 45 minutes or until rice is done. Remove lid, cover with cheese, garnish with black olives and bake uncovered for 15 minutes. May be served with a green salad and cornbread.
