TURKEY WALDORF SALAD 
Impress those who drop in on Thanksgiving weekend or your family any time you have cooked turkey on hand. Smoked turkey is especially good in this salad, although higher in salt.

SALAD:

2 c. cooked, diced turkey (about 10 oz.)
1 1/2 c. fresh bean sprouts
1 apple, unpeeled, diced
1 stalk celery, diced
1/4 c. dried currants (raisins may be substituted)
3 tbsp. chopped walnuts (opt.)

DRESSING:

3 tbsp. plain low-fat yogurt
2 tbsp. mayonnaise
2 tbsp. orange juice
1 tsp. grated orange rind

In a medium bowl, combine all the salad ingredients. In a small bowl, combine all the dressing ingredients. Pour the dressing over the turkey mixture and toss the salad. 4 servings.
