SHRIMP AND RICE 
1 lb. cleaned and deveined shrimp
3/4 stick butter
1 large onion, chopped
1/2 c. celery, chopped
2 tbsp. parsley
salt and pepper to taste
1 c. uncooked rice
2 c. boiling water

In a large skillet, melt 1/4 stick butter, onion and celery. Cook until tender (do not brown). Add shrimp and parsley. Cook for 10 minutes over medium heat. Add rice and boiling water. Cook for 1 hour over low heat until rice is tender. Before serving, add 1/2 stick melted butter on top of rice.
