HASH BROWN OMELET 
5 thin slices of bacon
2 c. frozen hash browns or diced boiled potatoes
1/2 c. chopped onion
1/2 c. green peppers, chopped
4 lg. eggs
1/4 c. milk
1/4 tsp. salt
1/8 tsp. black pepper
1/2 c. coarsely grated cheddar cheese

In 8 inch skillet that can go under a broiler, cook bacon until crisp; crumble bacon. Pour off all but 2 teaspoons fat from skillet. Increase heat to moderate; add defrosted potatoes, onion, green pepper. Press into skillet and cook about 3 minutes until potatoes start to brown. Turn potato mixture over and press firmly into skillet. In a small bowl, beat eggs, milk, salt and pepper. Pour over potato mixture; sprinkle with cheese and crumbled bacon. Cook 10 to 15 minutes without stirring until eggs are set. Broil 2 to 3 minutes until top is set and bubbly.

DIETITIAN'S NOTE:

What a great way to start the day! To decrease fat, cholesterol, sodium, and calories, consider the following: (1) decrease bacon to two strips; (2) cook potatoes in canola oil instead of bacon grease, (3) use skim milk; (4) use Kraft light natural cheese and (5) share this with at least 3 other people!
