SLICE AND BAKE OATMEAL COOKIES 
1 1/2 c. all-purpose flour
1 c. packed brown sugar
1 c. shortening
1 tsp. vanilla extract
3 c. quick-cooking oats, uncooked
1 tsp. baking soda
1 tsp. salt
1 c. sugar
2 eggs
1/2 c. chopped pecans

Combine flour, soda and salt; stir and set aside. Combine sugar and shortening. Cream well and beat in eggs and vanilla. Add flour mixture, mixing well. Stir in oats and pecans. Divide dough in half. shape each half into a 12x2 inch roll. Wrap in waxed paper and chill overnight.

Slice dough into 1/4 inch thick slices; place slices on ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes or until browned. Remove to wire racks to roll. Yield: about 6 dozen.
