TACO CHICKEN 
1 fryer (2 1/2 - 3 lbs.)
1 c. chicken broth
1 can Rotel tomatoes
1 can cream of chicken soup
1 can cream of mushroom soup
1 lg. onion, chopped
1 stick butter (may use less)
1 lg. pkg. taco flavored Doritos (or cheese flavored)
1 c. cheddar cheese, grated

Boil chicken until tender; remove bones and cut into bite size pieces and set aside. Reserve one cup of broth. Saute onion in butter until transparent. Mash tomatoes and mix with soups and reserved broth.

In 3 quart baking dish spread 1/2 bag crumbled Doritos in bottom of dish. Add chicken. Pour sauce over chicken. Sprinkle remaining Doritos over top and then sprinkle with 1 cup grated cheddar cheese. Bake at 350 degrees for 30 minutes. Serves 4 to 6.
